SEASONED PAN - FRIED CLUB STEAKS 
2 (4-6 oz.) cube steaks
Paprika
Salt
Pepper
Flour
1 1/2 tbsp. butter
1 1/2 tbsp. vegetable oil

SAUCE:

1/4 c. butter, melted
1 1/2 tbsp. parsley
1/2 tsp. dried tarragon

Season steaks with paprika, salt and pepper on both sides. Dust with flour. Heat butter and oil in a skillet and brown steaks over medium high heat on both sides (about 3 minutes per side). Combine sauce ingredients and pour over steaks. Serves 2. Note: Sauce is also good on baked potatoes.
