RICE MUSHROOM CASSEROLE 
1 box UNCLE BEN'S® Wild Rice
1 can (14 oz.) mushrooms
1 lg. bell pepper
1 lg. white onion
American or Cheddar cheese
1 stick butter
Half & Half

Cook wild rice as directed on package. Saute pepper, onion and mushrooms in butter. Layer rice, pepper mixture and grated cheese in baking dish. Pour Half & Half over to barely cover. Grate cheese on top.

Bake at 375 degrees until Half & Half is cooked down (about 30 minutes.) NOTE: Fresh mushrooms can be used instead of canned.
