CRACKER PUDDING 
1 c. Premium saltine crackers, crushed
1 c. sugar
1 c. coconut
4 c. milk
4 egg yolks

Beat sugar and egg yolks together in top of double boiler. Add milk, crackers, and coconut and cook over boiling water, stirring until thick like custard. Beat egg whites and 4 tablespoons sugar until stiff. Pour pudding into casserole dish. Spread egg white mixture on top of pudding, sprinkle coconut on top of meringue and brown in 350 degree oven.
