CRACKER PUDDING 
1 qt. milk
1 c. cracker crumbs (25-27 saltine squares)
1 egg white (beat up & put in last)
1 egg yolk (beaten)
1/2 c. sugar
1 tsp. vanilla

Pour milk in pan. When warm add full cup of crumbs, sugar and egg yolk (continue stirring). Bring to a boil and when thickened a bit add egg white and vanilla. Can add coconut if you like.
