FRENCH STYLE SOURDOUGH BREAD 
Dissolve 1 package yeast in 1 1/2 cups lukewarm water, mix with 1 cup Sourdough Starter, adding 4 cups flour, 2 tablespoons sugar and 2 teaspoons salt. Cover, let rise until double in size.

Then mix 1 cup of flour and 1/2 teaspoon of soda and stir into dough, adding enough flour to make a stiff dough. Knead on flour dusted board until smooth and shiny.

Shape into half load sizes, place on greased paper or sheet sprinkled with corn meal, leave to double again in size. Brush the top lightly with cold water. Make a sharp slash 1/4 inch deep in top of loaf and bake in 400 degree oven. Place a shallow pan with a little hot water on the bottom of the oven. Bake until a deep almond brown. Brush with melted butter and hot water then crisp in oven for 3-5 minutes.
