COFFEE BREAD - FINNISH STYLE 
2 c. milk
3 c. flour
2 cakes yeast

Heat milk, stir in flour and then yeast (dissolved in 1/2 cup warm water). Let rise for 1 hour, add:

1 1/4 c. sugar
3 yolks + 1 whole egg (4 eggs whole may be used instead of 3 yolks + 1 whole egg)
5 1/2 c. flour

Knead well for 15 minutes, add 1/4 pound butter, creamed; knead 15 minutes or until dough leaves hands; let rise again, put in greased pans and let rise again for 1 hour. Heat oven for 15 minutes and then bake 35 minutes. Before putting in oven brush top with beaten egg. Bake at 400 degrees for 5 to 10 minutes; 350 degrees for rest of time.
