MOM'S LEMON SQUARES 
This is a recipe my mom used to make when we were kids (or rather I would make it with her direction... so easy to do and so yummy!

Crust:

graham cracker wafers (amount depends on size of pan you will use)

Filling:

1 (14 oz.) can Eagle Brand sweetened condensed milk
juice of 2 lemons or 2 tbsp. lemon juice
pinch of salt

Mix condensed milk, lemon juice and salt together until it starts to thicken; set aside.

Note: Adjust lemon juice to suit taste.. I use more as I like it very tart.

Icing:

1/4 cup powdered sugar
1/2 tsp. butter
few drops of vanilla
milk

Mix powdered sugar, butter, vanilla and milk together to make icing of a thin consistency for spreading; set aside.

Assembly:

Line a shallow square / rectangular pan with graham cracker wafers (use whatever size pan you like up to 15x9-inch).

Spread a generous amount of lemon mixture over wafers until they are covered.

Add 1 or 2 more layers of wafers and lemon mixture on top (depends on how much filling you have left and the size of pan you are using).

Then drizzle top layer with icing and spread it thinly over all wafers (just enough to cover them).

Sprinkle top with coloured sprinkles (optional).

Let stand for a few hours until wafers soften (I usually refrigerate it but you can leave at room temperature as well). Cut into squares and serve.
