LYNDA'S HOLIDAY DRESSING BALLS 
2 boxes Stove-Top stuffing mix (1 each cornbread and turkey)
2 tbsp. water
1/2 to 3/4 cup Minute rice
1/4 to 1/2 cup finely minced onion
1/2 to 3/4 cup finely chopped celery
1 to 1 1/2 tubes hot and sagey bulk sausage (Parks) -OR-
1/2 to 3/4 tube EACH hot bulk sausage PLUS sage bulk sausage (both Jimmy Dean)

Brown sausage in frying pan (breaking up as you would hamburger). When sausage is almost done, mix in celery and onion with the sausage (do not overcook).

Prepare the Minute rice according to the directions on the box. Prepare the stuffing mix according to the directions on the box adding, adding the additional 2 tablespoons of water.

Drain most (but not all) of the drippings from the sausage, celery and onion mixture.

Combine dressing, rice and sausage mixture in a large bowl. When the mixture has cooled enough to put you hands in, form smallish meatballs. Place the meatballs in baking dishes. Place in 350°F oven for 15 to 20 minutes to lightly brown.

When ready to serve, place dressing balls on platter surrounding turkey.
