SKILLET SWEET POTATOES 
Into a large, heavy skillet, place 1 stick butter. Take one very large or 2 medium size sweet potatoes. Peel. Slice thin, into the skillet as the butter is melting. Turn potatoes as needed while finishing the slicing. Add 1/2 teaspoon salt. Fry until most of them have 1 side browned, but do not let butter or potatoes scorch. Add about 1/2 cup water, place lid on skillet and reduce heat to low. Potatoes need to be stirred occasionally. They are done in 15 to 20 minutes. Potatoes will taste as if you had added sugar to them. A fast and easy dish.
