SUNDOWN TOMATO CAPRESE APPETIZER | |
12 wedges roasted tomatoes (Sundown Foods) 12 leaves fresh basil 12 (1-inch) squares Mozzarella cheese 12 sourdough flatbread crackers (or similar) salt and pepper, to taste 12 dashes balsamic vinegar 12 dashes olive oil (optional) The sundown roasted tomatoes already have oil, so use discretion. Assemble crackers laid out on a large serving plate. Add one piece of cheese on top of each cracker, then add basil leaf and Sundown Roasted Tomatoes. When 12 stacks are complete, add oil/vinegar and salt/pepper. Serve immediately. Makes 1 dozen appetizers. Submitted by: Jon Varsano |
