HOMEMADE NOODLES 
2 c. flour
3/4 tsp. salt
2 egg yolks or 1 whole egg beaten
4 tbsp. water

Sift together flour and salt. Combine egg yolks and water. Stir into flour. If dough seems too dry to handle, gradually add more water. Don't add any more than absolutely necessary!

Divide dough in 3 parts, roll out each until paper thin. Wind dough jelly roll fashion, slice into narrow strips, about 1/8 inch wide. Separate and straighten. Strips dry thoroughly. These cook in half the time as store bought noodles.
