SAUTEED CUCUMBER RINGS 
3 med. cucumbers
2 tbsp. butter
1/2 tsp. salt
1/8 tsp. pepper

Peel cucumbers; cut crosswise into thirds; with spoon, remove seeds. Cut cucumbers crosswise into 1/4 inch thick slices to form rings. In 12 inch skillet over medium heat, melt butter; add cucumber rings, salt, and pepper. Cook 10 minutes or until cucumbers are just tender-crisp, stirring occasionally.
