CUCUMBER RING 
1 lg. cucumber
1 sm. onion
1 stalk celery
1 (3 oz.) pkg. lime flavored gelatin
1 1/4 c. boiling water
1 tbsp. vinegar
1/2 tsp. salt
Salad greens

Pare cucumber, halve lengthwise and remove seeds. Then thinly slice cucumber, onion and celery. Spread evenly in bottom of 1 quart ring mold. Boil the water. Pour over gelatin and stir until gelatin is dissolved. Add vinegar and salt. Mix. Chill until slightly thickened.

Pour gelatin over vegetables in mold. Chill until firm. To unmold, turn mold over on serving plate and shake gently. Garnish with salad greens.
