RICE CASSEROLE 
1 c. uncooked long grain rice
1 c. diced celery
1 med. onion, chopped
1 to 2 tbsp. green pepper, chopped
4 c. water
1 can cream of mushroom soup
1 1/2 c. leftover poultry or meat
Black pepper to taste
3 tbsp. butter

Saute celery, onion, green pepper in the butter until tender, but not browned. Add rice, water and mushroom soup. Cook 10 to 15 minutes. Add meat and black pepper. Put in casserole dish or cake pan. Bake in oven 45 minutes.
