LEMON CHESS PIE 
4 eggs
2 c. sugar
1/2 c. lemon juice (plus extra to taste tart)
1/4 c. milk
1 tbsp. flour
1 1/2 tbsp. cornmeal
1 stick butter (melted)
1/4 tsp. vanilla
Lemon rind and flavoring

Beat eggs and sugar. Mix remaining ingredients and pour into unbaked pie crust. Bake 10 minutes at 400 degrees. Then reduce to 350 degrees and bake an additional 30 minutes until nice and brown.
