FARM CAKES 
CAKE:

3 c. flour
2 c. sugar
1/2 c. unsweetened cocoa powder
2 tsp. baking soda
2 c. water
2/3 c. vegetable oil
2 tbsp. cider vinegar
2 tsp. vanilla extract

Preheat oven to 350 degrees. Sift together the flour, sugar, cocoa, and baking soda into a large mixing bowl. Add the water, oil, vinegar, and vanilla and beat at medium speed for about 3 minutes until well combined.

FILLING:

8 oz. cream cheese at room temperature
1 egg
1/3 c. sugar
Pinch of salt
6 oz. semi-sweet chocolate chips

In a large bowl cream the cream cheese. Add the egg, sugar and salt and beat until smooth and thoroughly combined. Fold in the chocolate chips.

Assemble the farm cakes: Pour the batter into cupcake cups (which are in muffin pans), filling each about 2/3 full. Spoon 2 teaspoons of the filling into the center of each cake.

Bake for 20-25 minutes or until the cake springs back when lightly touched. Serve warm or at room temperature. Yield: 18 farm cakes.
