COCOA OAT BREAD 
Preparation time: 15 minutes. Tastes "Fudgier" if it sits for a day (i.e.) recommended do a day ahead. It also crumbles less if it sits a day (somewhat crumbly because of the oatmeal).

1/2 c. butter (preferably tub butter vs. stick)
1/4 c. corn oil
1/2 c. sugar
1/3 c. honey
3/4 c. skim milk
3 egg whites
3/4 c. flour
3/4 c. oat bran
1 tsp. baking soda
3 tbsp. unsweetened baking cocoa
1 1/2 c. oatmeal.

1. Combine dry ingredients and set aside.

2. In a separate bowl, combine butter and sugar until creamy; add oil - mix well; add egg whites; mix well.

3. Add dry ingredients to moist ingredients, alternating with skim milk, mix well.

4. Pour into greased (use non-stick spray like Pam to grease pan) loaf pan. Bake at 325 degrees for 45-50 minutes. Makes 1 loaf (approximately 8 slices).
