POTATO YEAST ROLLS 
1 c. scalded milk
1/4 c. lard
1/4 c. butter
1/2 c. sugar
1 c. mashed potatoes
1 c. flour
2 eggs, beaten
1 cake yeast
1/2 c. lukewarm water
1 1/2 tsp. salt
About 5 c. flour

Mix the hot milk, fat, and sugar. Stir in the potatoes and let stand until lukewarm. Then add 1 cup flour and the eggs. Mix yeast in warm water. Add this to potato mixture. Beat until thoroughly mixed. Cover and set aside in a warm place until mixture rises and is full of bubbles. Add more flour to make dough stiff enough to knead. Knead until dough is elastic. Cover and set in warm place until double in size. Knead dough and shape into rolls. Place on greased cookie sheet. Cover and let rise until 2 1/2 times as large as when shaped. Bake at 400 degrees for 20 to 25 minutes. Clover leaf rolls are made by placing 3 balls in muffin cup pan.
