POTATO YEAST ROLLS 
1 c. warm milk
1/2 c. shortening
1/3 c. sugar
1 c. mashed potatoes
2 c. flour
2 beaten eggs
2 pkgs. yeast
1/2 c. warm water
1 tsp. salt
About 4 c. flour

Place yeast in warm milk. Mash the potatoes, add shortening, sugar, eggs and salt. Add warm (not hot) water to potatoes. Add 2 cups flour to the mixture. Gradually stir or fold in rest of flour. Either pinch or cut dough into desired rolls. Place rolls in 9"x13" pan, letting rise until double. Bake at 350 degrees for approximately 45 minutes or until golden brown.
