SPINACH CASSEROLE 
1 pkg. frozen, chopped spinach
6 eggs, beaten
1 sm. carton cottage cheese
1 med. sweet Vidalia onion, chopped
1 lb. Cheddar cheese, shredded

Cook spinach per package directions; drain well. Squeeze out all excess water; mix with eggs. Add cottage cheese and onions. Pour in casserole dish and sprinkle shredded cheese on top. Bake at 350 degrees for 30 minutes.
