FROSTED OATMEAL CAKE | |
1 stick butter 1 1/2 c. water 1 c. white sugar 1 1/2 c. flour 1 tsp. nutmeg 1/4 tsp. salt 1 c. quick oats 1 c. brown sugar 2 eggs 1 tsp. baking soda 1 tsp. cinnamon 1 tsp. vanilla Cut 1 stick of butter into small pieces in a large mixing bowl. Add 1 cup of quick oats and pour the boiling water over all. Let this stand for 20 minutes. Add brown sugar, white sugar, and eggs. Mix well. Sift together the flour, soda, nutmeg, cinnamon, and salt. Add this to the liquid mixture and beat well. Add the vanilla. Mix well. Pour into a greased 9 x 13 inch pan. Bake at 350 degrees for 30 minutes. FROSTING: 1 c. brown sugar 1 1/2 c. coconut 1 unbeaten egg 1/4 c. melted butter 1 c. chopped nuts 3 tbsp. light cream Mix all ingredients together and pour on cake as soon as it is baked. Put under broiler to brown lightly. |
