FRUIT GLAZED BAKED CHICKEN 
1 (3 lb.) chicken
6 oz. frozen pineapple
Grapefruit juice concentrate, thawed
1 tsp. salt
Dash of pepper
1/4 tsp. ginger

Wash chicken thoroughly removing excess skin and fat. Brush once with fruit juice. Add salt, pepper, and ginger. Bake slowly at 325 degrees occasionally brushing with fruit juice. Only 230 calories per serving.
