FRUIT GLAZED PIE 
6 c. diced fresh fruit, strawberry or peaches
1 c. sugar
3 tbsp. cornstarch
1/2 c. water
4 oz. Neufchatel strawberry or orange cheese
9 inch baked pie shell

Mash fruit to make 1 cup. Mix sugar and cornstarch in a 2 quart pan. Stir in water and mashed fruit. Cook on medium heat, stir constantly until thickened and boil. Boil 1 minute. Let cool. Beat cheese until smooth. Spread on bottom of pie shell, then take remaining fruit, place on top of cheese, then pour fruit mixture on top. Refrigerate for 3 hours.
