POTATOES ITALIANO 
4 med. baking potatoes
1 lb. broccoli (tops of stalks only)
1 lg. green bell pepper
1 med. sweet onion
1/2 c. Lite Italian dressing

Place potatoes between 2 wooden spoons and slice through several times to create a "fan" with the potato. Be careful not to cut clear through potato. Place potatoes in large casserole dish and add small amount (about 1/4 cup of dressing) into open areas of the potatoes.

Lay broccoli over top of potatoes. Slice pepper and onion into 1/4 inch thick pieces and garnish over broccoli. Pour remaining dressing over all of the vegetables. Cover and bake for 1-1 1/2 hours at 350 degrees.
