COUNTRY CAPTAIN CHICKEN | |
1 broiler/fryer chicken or chicken legs/thighs/breasts 1/4 c. flour 1 tsp. salt 1/2 tsp. pepper 1/4 c. butter 1 med. onion, finely diced 1 green pepper, finely diced 1 clove garlic, crushed 1 1/2 tsp. curry powder 1/2 tsp. dried thyme 1 (1 lb.) can stewed tomatoes Coat chicken with flour mixed with salt and pepper. Brown in skillet with butter. Remove and add onion, pepper, garlic, curry powder and thyme. Stir over low heat to get up drippings, add tomatoes. Bake chicken with sauce (uncovered) in moderate oven (350 degrees) for 30 minutes. Serve with rice. |
