SPECIAL PORK TENDERLOINS 
2 (1/2 lb.) pork tenderloins
Non-stick cooking spray
2 clove garlic, minced
2 c. onions, sliced
1/4 tsp. thyme
1/2 tsp. rosemary
1/4 tsp. salt
1/8 tsp. pepper
2 tsp. oil

Heat oven to 375 degrees.

Spray roasting rack with cooking spray and put in pan. Trim tenderloins, cut slit down center of each one, but not through. Open tenderloins, so each lies flat and place on rack.

Spray skillet with cooking spray; add oil. Over medium high heat saute onions and garlic until tender. Stir in thyme, rosemary, salt and pepper. Spread onion mix evenly over meat. Bake at 375 degrees for 40 minutes or until meat is no longer pink. Serves 4.
