SPINACH BALLS 
2 (10 oz.) pkgs. frozen chopped spinach, thawed & drained
2 c. Pepperidge Farm herb stuffing mix, crushed
1 c. Parmesan cheese
3/4 stick butter, melted
4 sm. green onions, finely chopped
3 eggs or egg substitute
1/8 tsp. nutmeg

In large bowl, combine all ingredients. Mix thoroughly. Shape into balls (approximately 1 inch diameter to serve as appetizer, 1 1/2 to 2 inch diameter to serve as side dish). Bake at 350 degrees for 10 to 15 minutes.
