ZUCCHINI CHOCOLATE CAKE | |
2 1/2 c. sifted flour 1/4 c. cocoa 1 tsp. baking soda 1 tsp. salt 1/2 c. butter 1/2 c. oil 1 3/4 c. sugar 2 eggs 1 tsp. vanilla 1/2 c. buttermilk 2 c. shredded zucchini, unpared 1 (12 oz.) pkg. chocolate chips 3/4 c. chopped walnuts Sift together flour, cocoa, soda and salt; set aside. In large bowl, cream together butter, oil and sugar; beat with mixer on medium speed until light and fluffy. Beat in eggs, one at a time, beating well after each addition. Blend in vanilla, add dry ingredients alternately with buttermilk, beating well after each addition. Stir in zucchini. Pour batter into a greased 9x13 inch pan. Sprinkle with chocolate pieces and walnuts. Bake at 325 degrees for 55 minutes or until cake tests done. Cool in pan. Cut into squares. If you don't tell guests zucchini is in cake, they might never guess. |
