DOUBLE CHOCOLATE ZUCCHINI CAKE | |
1 1/2 c. sugar 1 tsp. vanilla 2 1/2 c. flour 1/4 c. unsweetened cocoa 1/2 tsp. salt 1/2 c. chopped walnuts 1 c. butter (1 stick) 2 lg. eggs 1/2 c. sour cream 1 tsp. baking soda 2 c. shredded zucchini 1 c. chocolate chips In large bowl with mixer beat sugar, butter, vanilla and eggs until light and fluffy. Add flour, sour cream, cocoa, baking soda and salt. Beat one minute. Fold in zucchini, nuts and chocolate chips (batter may be thick). Spread evenly into 9"x13" pan. Bake 40 to 45 minutes at 350 degrees. Test with toothpick. Sprinkle powdered sugar over cake when cooled. |
