GREAT-GRANDMA'S BUTTERSCOTCH PIE 
1 c. brown sugar
1/4 c. flour
Pinch of salt
1 3/4 c. milk
2 eggs, separated
1 tsp. butter
1/2 tsp. vanilla
Baked pie shell
4 tbsp. sugar

Mix together brown sugar, flour and salt. Add milk and cook mixture until it thickens. Just before removing from stove stir in beaten egg yolks and butter. Add vanilla. Pour into baked pastry shell and cover with meringue made with the 2 egg whites. Brown in a slow oven (350 degrees) 15-20 minutes.

MERINGUE: Have 2 egg whites at room temperature. Beat until light. Add 4 tablespoons sugar, a little at a time, beating well between additions.
