FRESH APPLE CAKE 
2 c. sugar
1 c. oil
2 eggs
2 1/4 c. flour
1 tsp. vanilla
1/2 tsp. salt
2 c. chopped apples (peeled)
1 1/2 tsp. baking soda
1 tsp. nutmeg
1/2 tsp. allspice
1/2 tsp. cloves
1 tsp. cinnamon
1 c. buttermilk
1 c. English walnuts, optional

Cream sugar, oil and eggs together. Sift dry ingredients. Add all at once with buttermilk and vanilla. Combine well, stir in walnuts and apples.

Place in 3 cake pans which have been greased and floured. Bake in 350 degree oven for 35-40 minutes. When cooled spread filling between layers and frost with seafoam icing.

FILLING:

1 tsp. cornstarch
2/3 c. evaporated milk
2/3 c. sugar
2 egg yolks
1/3 c. butter
1 tsp. vanilla
1/2 c. nuts

Cook until thickened about 12 minutes. Add 1 cup coconut (optional), nuts and vanilla. Spread between layers.

SEAFOAM ICING:

2 egg whites
1 1/2 c. brown sugar, packed
1/3 c. cold water
1/2 tsp. cream of tartar or 2 tbsp. syrup
1 tsp. vanilla

Beat over hot water until it forms soft peaks. Take out of water. Add vanilla and beat until firm. Frost top and sides of cake.
