FRESH APPLE CAKE 
1 1/4 c. oil
2 c. sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. vanilla
3 eggs
3 c. chopped apples
1 c. chopped pecans
3 c. flour

Stir all ingredients by hand for cake. Bake 1 1/2 hour at 350 degrees.

ICING:

1/2 c. buttermilk
1 c. sugar
1/4 stick butter
1 tsp. white syrup
1/2 tsp. vanilla
1/4 tsp. baking soda

Cook icing until it comes to a boil. Take toothpick and put holes in cake while hot, slowly pour icing in holes on top. Serve warm.
