HONEY WHEAT MUFFINS 
1 c. all-purpose flour
1/2 c. whole wheat flour
2 tsp. baking powder
1/4 tsp. salt
1 egg, beaten
1/2 c. milk
1/2 c. honey
1/4 c. cooking oil
1/2 tsp. lemon peel, finely shredded

In a mixing bowl, stir together all-purpose flour, whole wheat flour, baking powder, and salt. Make a well in center. In another bowl, combine beaten egg, milk, honey, cooking oil, and lemon peel. Add egg mixture all at once to dry mixture. Stir just until moistened (batter should be lumpy). Grease muffin cups or line with paper cups; fill 2/3 full. Bake in a 400 degree oven for 18 to 20 minutes or until golden. Remove muffins from pans; serve warm. Makes 12.
