BAKED SALMON LOAF 
1 (1 lb.) can salmon
2 c. fresh bread crumbs
1 egg, well beaten
1/2 c. milk
2 tbsp. minced onion
2 tbsp. snipped parsley
1/2 tsp. salt
1/4 tsp. Tabasco
1/4 tsp. monosodium glutamate
1/4 tsp. poultry seasoning
2 tbsp. melted butter
2 tbsp. lemon juice
A few potato chips

Heat oven to 375 degrees. To salmon, add all ingredients except potato chips. Place mixture into lightly greased 9"x5"x3" loaf pan; smooth top and sprinkle with crushed potato chips. Bake 40 minutes or until firm in center. To serve, loosen edges with spatula. Serve as is with lime or lemon wedges, or with egg sauce.

EGG SAUCE:

1/4 c. butter
2 tsp. flour
1/4 tsp. pepper
1/2 tsp. salt
2 tsp. prepared mustard
2 sliced hard cooked eggs
Dash paprika
1 c. milk

In double boiler (or saucepan) over low heat, melt butter, add flour and other ingredients; stir until blended smooth. Slowly add milk, stirring constantly to avoid lumps. Cook until smooth and thickened.
