SALMON LOAF WITH SWISS CHEESE 
1 lb. salmon
2 c. fresh bread crumbs
2 tsp. instant minced onion
1 tsp. dried parsley flakes
1 tsp. Worcestershire sauce
1/3 c. shredded Swiss cheese
1/2 tsp. salt
1/8 tsp. pepper
1 egg, beaten
Milk
1 tbsp. lemon juice
2 tsp. melted butter

Drain salmon, reserving liquid. Flake salmon. Add crumbs, onion, parsley, salt and pepper. Add enough milk to reserved salmon liquid to make 1/3 cup. Add 1/3 cup reserved liquid, egg, Worcestershire sauce and lemon juice to salmon mixture.

Mix lightly and shape into loaf in greased 11 x 7 x 1 1/2 inch baking dish. Bake at 350 degrees for 40 minutes. Remove from oven. Brush top with melted butter and sprinkle with cheese. Return to oven and bake 5 more minutes. Serves 4 to 5.
