WALNUT, ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
1 tsp. vanilla
2 c. grated zucchini
3 c. sifted flour
1 tsp. salt
3 heaping tsp. cinnamon
1/4 tsp. baking powder
1 tsp. baking soda
3/4 c. walnut pieces

Beat eggs until foamy. Beat in oil, sugar and vanilla. Mix well and beat in zucchini.

Sift together dry ingredients and add to first mix. Mix well and fold in nuts. Pour into 2 greased loaf pans and bake at 325 degrees for 1 hour plus bread is done when a toothpick inserted comes out clean.
