PIMENTO CHEESE 
2 (10 or 12 oz.) pkg. sharp Cheddar cheese
1 (7 oz.) jar diced pimento
1 tsp. salt
1/2 tsp. black pepper
3 tbsp. sugar
1 pt. Kraft mayonnaise

Grate cheese by hand or food processor. Spread in 9 x 13 dish. Sprinkle with sugar, salt and pepper and set aside.

Pour contents of jar of pimento onto a plate and mash into fine pieces. Pour pimento and juice over cheese. Mix 1/2 jar of mayonnaise into cheese and pimento mixture, then continue to add mayo until desired consistency is met.
