FUNNEL CAKES | |
1 lg. egg 1 c. unsifted all purpose flour 1 tsp. baking powder 3/4 c. milk 1/8 tsp. cinnamon Confectioners sugar In electric skillet or heavy pan heat 1 1/2 to 2 inches of salad oil to 360 degrees. Beat egg and milk; stir in flour, baking powder and 1/4 teaspoon salt and cinnamon. Holding finger over funnel pour 1/4 cup batter into funnel. Starting in center of skillet, drop batter into hot oil, move funnel in circle to make snail like coil rings each 6 inches in diameter. Fry cake, turning once with tongs about 2 minutes on each side. With tongs lift cake from hot oil, holding over skillet - to drain slightly. Place on paper towel in warm over a wire rack, while frying additional cakes. If batter thickens while standing, add more milk so batter will flow freely through funnel. Sprinkle confectioners sugar over cake before serving. Makes 6 cakes. |
