RICE & BARLEY PILAF 
1 c. uncooked brown rice
1/2 c. uncooked barley
1 c. sliced fresh mushrooms
1 c. thin sliced celery
1 c. thin sliced carrots
1 c. minced garlic
1/2 c. fresh chopped parsley or 2 tbsp. dried
1 tbsp. Mrs. Dash
1 tbsp. tamari sauce
1/4 c. pimentos

Cook brown rice and barley separately according to package directions. (Use 2 cups water for 1 cup rice and 3 cups water for 1 cup barley.) Saute garlic and onion in 1 tablespoon vegetable oil until soft. Add mushrooms and cook, stirring gently for 3 to 5 minutes. Add chopped parsley.

Steam carrots and celery until crisp and tender about 10 to 15 minutes. Combine onion, mushroom mixture and carrot, celery mixture and grains. Add Mrs. Dash, pimentos and tamari. Stir gently. Makes 6 servings. Single serving = 1 cup grain.
