SAUSAGE CORNBREAD STUFFING | |
2 onions (1 med. and 1 lg.) 1 medium bell pepper poultry giblets 1 (6 oz.) box Jiffy cornbread mix 1 (1 lb.) pkg. sausage 1 small pkg. Pepperidge Farm stuffing mix 2 tbsp. salad dressing 2 tbsp. poultry seasoning thyme, to taste Chop onions and bell pepper. Simmer half of onions with poultry giblets that have been seasoned to taste. Make cornbread according to directions on box. Crumble and cook sausage. Drain well. Sauté remaining onions and bell pepper in butter. Pour stuffing mix in large bowl and crumble in cornbread. Add minced giblets and broth, onions, and bell pepper, poultry seasoning and thyme (to taste) and toss well. Make sure all cornbread and stuffing mix is well moistened. Stir in salad dressing. Add sausage and stir well. Place in baking dish and bake at 350°F for 35 to 40 minutes. |
