SWEET POTATO CAKE 
1 c. butter, softened
2 c. sugar
2 1/2 c. mashed cooked sweet potatoes
4 eggs or 8 egg whites
3 c. sifted all-purpose flour
1/4 tsp. salt
2 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 tsp. vanilla extract
1 tsp. orange extract

Thoroughly cream butter and sugar. Add sweet potatoes and beat until light and fluffy. Add eggs one at a time, beating well after each addition. Sift together flour, baking powder, baking soda, cinnamon and nutmeg. Gradually add to creamed mixture, beating well. Blend in vanilla and orange extract.

Pour into a greased and floured 10-inch tube pan. Bake at 350°F for 1 hour 15 minutes or until brown. Cool 5 minutes and remove from pan. While still hot, ice if desired.
