TURKEY SALAD 
3 c. cooked turkey, diced
1 can water chestnuts
1/2 c. celery, chopped
3/4 c. macadamia nuts
2 tbsp. vinegar
2 tbsp. crystallized ginger
3/4 c. mayonnaise
1 tsp. curry powder
1 tbsp. soy sauce
1 1/2 c. pineapple, diced

Combine turkey, water chestnuts, celery and nuts. Add vinegar. Mix well. Add ginger. Combine mayonnaise, curry powder, and add pineapple and soy sauce. Add to turkey mixture. Mix thoroughly. Chill several hours. Serve on lettuce or in hollowed-out pineapple shell. Makes 8 servings.
