SAUSAGE EGG ROLLS 
1 pkg. egg roll skins
1 lb. sausage, fried
1/4 c. onion, grated
1 c. carrots, shredded
1 c. potatoes, shredded
1 c. cabbage, shredded
4 tbsp. soy sauce
1 egg, beaten
1/4 tsp. salt
1/4 tsp. pepper

Mix (fried) sausage, onion, carrots, potatoes, cabbage, soy sauce, salt and pepper in large bowl. Separate egg roll skins and cut each in half. Place 1 tablespoon of sausage mixture on skin. Roll up. Spread small amount of egg on edges to seal. Place in hot oil and fry for 3 minutes or until golden brown. Makes approximately 24 egg rolls. Serve hot.
