BAKED SCALLOPS WITH ORANGE

3/4 lb. lg. sea scallops
2 tsp. olive oil, approximately
2 navel oranges, carefully peeled
3/4 lb. sm. bay scallops
1 tsp. fresh dill, chopped

Preheat oven to 450 degrees. Put the 3/4 pound large sea scallops in a 9 inch baking dish, drizzle with olive oil. Using a small sharp knife, carefully cut the orange sections from the white membrane, working over the baking dish to catch the juice. Using your hands, squeeze out all remaining juice from the membranes over the dish. Arrange orange sections among scallops. Bake for 8 minutes. Remove baking dish from oven and turn heat to broil. Add the 3/4 pound small bay scallops to the dish; sprinkle with dill. Broil just until all scallops are cooked, 3 to 4 minutes.

Recipes for scallops usually are fried, I liked this one since it is baked.
