BAKED POTATO CASSEROLE 
6-8 med. potatoes
1 lb. Velveeta, chunked
1 lb. bacon
1 - 1 1/2 c. Miracle Whip
1/4 c. chopped onions

Cook bacon until crispy, crumble and set aside. Clean potatoes and cut into chunks (leave potato skins on) and boil until tender. Drain. Spread potatoes in casserole dish.

While potatoes are cooling, mix mayonnaise, onions and Velveeta together and when potatoes are cool, take spatula and spread mayonnaise, onion and cheese mixture over the top of potatoes. Bake 350 degrees for 30-40 minutes. Sprinkle crumbled bacon over top. Bake 5 minutes.
