BAKED POTATO CASSEROLE 
8 lg. potatoes, cooked, peeled and diced
1 lb. American or Velveeta cheese, diced
Salt and pepper to taste
1 c. Hellmann's mayonnaise
1/2 c. chopped onion
1/2 lb. bacon, diced and partially cooked

Combine potatoes, cheese, mayonnaise and onion. Salt and pepper to taste. Place in 9 x 13 inch baking dish. Top with bacon. Bake 1/2 hour at 325 degrees.

Serves 12.
