DIABETIC CAKE 
1/2 c. shortening
1 1/2 c. sugar
1 c. cooked, mashed pumpkin
2 eggs, beaten
1/3 c. frozen orange juice concentrate
1 2/3 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. salt
1/2 tsp. of each: allspice, gloves, nutmeg, cinnamon
1 c. raisins
1/2 c. nuts

Cream shortening, gradually add sugar, beating well. Add pumpkin, eggs and orange juice, mix well. Combine remaining ingredients, mixing well and stir into pumpkin mix. Pour batter into greased and floured 13 x 9 inch pan. Bake at 350 degrees for 30-35 minutes. Cool.

FROSTING:

1 (3 oz.) softened cream cheese
6 tbsp. softened butter
1 tbsp. orange juice
1 3/4 c. powdered sugar

Cream cheese and butter, add orange juice, mix well. Add sugar and mix well.
