8 c. fresh ripe tomatoes, peeled, chopped, seeded 4 c. green bell pepper, seeded and chopped 2 c. hot pepper (banana, jalapeno), chopped and seeded 1-1/2 c. onion, chopped 3 tsp. salt (no iodine) 4 cloves garlic, minced 2 c. cider vinegar Combine tomatoes, peppers, onions, garlic, vinegar and salt. Bring to a boil, reduce heat and simmer 20 minutes. Put on water for hot water bath at this point. Place jar seals in boiling water and keep warm. Pour salsa in hot jars, leaving 1/4 inch headspace. Wipe jar lip and place seal on with screw-on cap. Place jars in hot water bath. Process 30 minutes in soft boiling water. Makes 8 pints. Note: Can increase tomatoes to 9 cups and decrease hot pepper to 1 cup for milder salsa. |
