ESTHER'S SUGAR COOKIES 
1 c. powdered sugar
1 c. granulated sugar
1 c. oil
1 c. butter, softened
2 eggs
1 tsp. baking soda
1/2 - 1 tsp. salt
1 tsp. vanilla
4 1/4 c. (approx.) flour

Cream together the sugars, oil and butter. Add eggs and beat well. Mix in the dry ingredients. Roll dough into small balls and roll ball in sugar. Place on ungreased cookie sheet. Flatten each cookie with fork making a criss cross design. Bake at 375 degrees for 7 to 10 minutes or until set but not brown. This is a "melt in your mouth" cookie and the best sugar cookie I have found. This dough can also be used in a cookie press. When using cookie press, sprinkle colored sugar over each cookie after pressing them out onto pan.
