ENGLISH AFTERNOON TEA SCONES 
2 c. flour
1/2 tsp. baking soda
Good pinch salt
1 egg
1 tsp. cream of tartar
1 tbsp. sugar
1 1/2 oz. butter
About 1/2 c. milk
3/4 c. raisins, if desired

Mix together all the dry ingredients. Blend in the butter. Make into a stiff dough by adding the beaten egg and milk (reserving a little egg for brushing on top of scones). Roll out and cut into rounds 1/2 inch thick. Bake about 15 minutes at 400 degrees.

Serve with butter and jam.
